The Saturday 7

1. I survived a whole week of Keto!! (Feel free to scroll past this very long recap if you're not interested.) I absolutely despise it, but I'm sticking with it. 💪 I started on Sunday and immediately had my resolve tested with lunch at Justin's parents' after church. Justin's mom made my absolutely favorite cheese bread, plus hash brown casserole, and two  different chocolate cakes!! I ate my meat and veggies and drank water like a good little peasant. The rest of the week has been eggs, meat, cheese, more cheese, almonds, avocados, and a treat of 4 strawberries a day.  We did have some good dinners thanks to Hip2Keto and Pinterest. Monday was chicken cordon bleu casserole . Tuesday was Pull-Apart Pizza Bites made with fathead dough (it wasn't my favorite, but I also messed up the fathead dough recipe, so hopefully it'll be better next time). On Wednesday, I made Mongolian beef and broccoli with cauliflower rice. That was my first foray into cauliflower r

1. I got to work in the library for the second time on Monday. On my first day a couple weeks ago, I didn't have to aid in the morning art classes, but this time I did, and it made the whole day a different experience. I was running around school non-stop all day. I literally sat at the computer scarfing down my lunch while I checked in books, because after my lunch I aid in the Kindergarten room, then go straight to recess duty, then straight back to the library for my 3rd graders. It was craziness, and despite the shoes I bought with memory foam soles that were so comfy in the store, my feet were killing  me by the end of the day. I even had a blister on my bunion. 🤦#youknowyoureoldwhen . . . So I'm on the hunt for supportive dress shoes that will accommodate my bunion without looking like they're made for someone with a bunion. 1. On Tuesday, our local library hosted storytime at Schwallier's - an apple orchard/play area/petting zoo. It was a nice day, so my sisters, cousin Esther, and I decided to take our kids. Apparently every other stay-at-home-mom in the tri-county area also had the same idea. It was madness . Poor Schwallier's was totally unprepared for that kind of turn-out. They kept pulling out more picnic tables and started baking a plethora of donuts. When we bought donuts before heading home, there was only one variety left and the poor woman working the counter said, "We didn't expect such a crowd for a library event!" Hahahaha. Never underestimate a free event geared toward stay-at-home-parents of young kids who have been largely cooped up for the past 18 months. There were a bunch of kittens roaming around that Levi was completely enamored with.  Levi didn't like his donut, so I may have eaten two. Didn't want to be wasteful! 2.
